"Unbelievably complex wine! It spent 84 months on lees - which truly is a lifetime and a half in the Champagne world. Between the extended lees ageing and the fact the base wines were fermented, and partially aged, in older oak, this wine was destined to be quite a complex and sophisticated Champagne. Immediately on the nose you are delighted with a range of buttered toast, toffee, vanilla brioche, soft caramels, then the fruit richness envelopes you like a blanket. Baked apples and yellow peaches line up next to the pastry dough and creamy apricots. The palate is rich and creamy with enough acidity to be there but not sour and zingy - at all! This is for drinking now or in 10+ years down the track."
