Chardonnay and Pinot Noir
"Lemon oil, white flowers and mint are some of the notes that open up in the 2007 Extra Brut Grand Cru Cramant Vieilles Vignes de Levant, which emerges from a parcel of 50-70 year-old vines in Cramant. Here the interplay of bright aromatics and vertical, old-vine structure come together beautifully. Next to some of the other wines in the lineup, the 2007 is a bit compact, but it is quite pretty just the same. The Vieilles Vignes is fermented and aged in a combination of neutral barriques and foudres."

Sparkling wines are versatile when it comes to food matching. Lighter and more aromatic sparkling wines are best with spicier foods, where richer and more complex bottle-fermented sparkling wines are best with richer foods.
