Carolina Gatti Winery

Carolina Gatti is a seemingly revolutionary winemaker up the Veneto region on northern Italy. She produces a Prosecco that is quite unlike every other Prosecco produced. She uses the 'Ancestral Methode' which is the style of making wines that was popular and used before the 'Champagne Method' (or 'Methode Traditionelle') became used en masse. It gives the resulting wines a yeasty and textural layer that Prosecco wines otherwise lack.
