Food and wine matching is a difficult task that many a chef, taster or sommelier could spend a lifetime trying to perfect. The greatest issue is that there is simply no such thing as a perfect pairing, as not everyone will agree. There are some rules that you can use to help you find pairings that work for you though.

NOTE: Food and Wine Matching is all about finding balance, or a harmony, between the foods and the wines. For example you should look towards always balancing fruitiness/sweetness with acidity or savoury. Remember the basic rules for finding balance within a wine – this can quite easily be translated to food and wine matching. Think of wine as an ingredient in a complete meal.

First we shall look into the effect foods have on wines. Then moving onto the principles of how to match certain wine types with the best food groups.
