Botrytis/Noble Rot
Botrytis, or Noble Rot, is the type of rot that is behind many of the sweet wines of the wine world. It sounds terrible, disgusting and like a bad thing, but you can take it from us winemakers around the world jump for joy to find grapes covered in the stuff.
