Classic aromas of Molinara are Red Cherry, Wild Strawberry, Raspberry and Red Plums
Molinara makes up the famous blend for the red wines of Valpolicella alongside of the more important Corvina and Rondinella grapes.
Molinara has always been the third wheel in the Valpolicella blend, only officially been mentioned in Italian records since the early nineteenth century where Corvina and Rondinella where quite a lot earlier.
Molinara adds in acidity and freshness to the Valpolicella wines and for this reason is most important in the fuller bodied Recioto della Valpolicella and Amarone della Valpolicella wines. Generally speaking, Molinara will only make up to 10% of the overall blend. It will often help to add light red fruit flavours such as wild strawberry, raspberry and red plum.
