Dried Grapes (Passerllirage or Passito)
Sweet wines made by drying out of the grapes have concentrated flavours as well as a raft of dried fruit flavours. Many of the sweet wines of warmer climates such as Italy, Spain and Greece will use this method over Botrytis or Late Harvest.
